Like Joey (think Friends), I love sandwiches and one of my favourites is a delicious vegetarian pickled cabbage (don’t switch off!) sandwich!
It’s delicious! Crunchy and complimented with a few other textures and tastes to really make your mouth water!
So, on a lovely slice of bread of your choosing, we start with cheese. I like Cheddar. This is a moisture barrier and keeps the bread from getting soggy.
Next, I layer the pickled cabbage on, you can go as light or heavy as you like. I buy my pickled cabbage from the supermarket but this is fairly easy to make at home, there’s a lot of YouTube videos on how to do this.
You can add other ingredients here as you like – jalapeno, gherkins, shredded carrots, sweetcorn, tomato (I’m a vegetarian, can you tell?!).
I usually opt for jalapeno’s or chilli’s (or both!) – I like spice, onions and cherry tomatoes. I top the lot off with some yummy yellow mustard.
You can add salt and pepper, but I don’t as I don’t think it needs it.
Finally, you need another moisture barrier. I use lettuce.

And there you have it – a simple and super easy, delicious sandwich. I love the crunch from the cabbage and lettuce, the tangy taste from the pickled cabbage, the spicy kick from the jalapeno, the cheese… because, well, it’s cheese.
So easy – guilt free and delicious! Yum!
